The famous Swiss Alpine delicacy, raclette, has been enjoyed for centuries. The word itself is derived from the French word "racler", meaning "to scrape", as the cheese traditionally was scraped from the heated half-wheel onto a plate over boiled new potatoes and served with sour gherkins and pickled onions. Today raclette is conveniently heated right on the tabletop using a raclette oven or grill, making it a social event as much as a delicious meal. Our raclette cheese is produced from pasteurized cow's milk and then carefully cured up to 6 months. It is characterized by a firmly textured, pale-yellow body with scattered small holes.
