Staub Braiser
Braising is a cooking technique for meat or poultry that combines moist and dry heat. First the meat is seared at high temperature to brown the surface and then is finished in a covered pot or pan with a flavorful liquid (e.g. broth) for an extended time until fork tender. Braising is ideal for cooking tougher and inexpensive cuts of meat or poultry for which many popular recipes of evolved such as pot roast, coq au vin, or osso bucco.
The Staub braiser is ideal for this classic cooking technique. Available, in two sizes, this wide, shallow pan allows easy searing or sautéing. The honeycomb textured pan surface keeps food from sticking while the heavyweight enameled cast iron construction allows for steady, even heating. The heavy lid seals the pan for braising, and spikes projecting from the underside of the lid add self-basting action. Pan and lid are enameled inside and out with multiple coasts for durability - and no pan seasoning maintenance is required since no cast iron is exposed. The brasier can be used on any cooktop, including induction, and is oven and broiler safe up to 500°F. The smooth enameled pan underside protects delicate surfaces. Two sturdy handles on the pan's sides and a nickel-plated knob on lid complete the brasier. Made in France.
