Many times in a busy kitchen, a cook cannot watch a pan during the entire frying process. Designed only for induction cooking, the new ProControl frying pans from Demeyere limit the maximum temperature to 485°F even under full induction cooktop power - no more overcooking! The secret of the pan lies in a special alloy used in the outer layer that looses its magnetic properties once this temperature has been reached, which in turn prevents further transmission of energy from the induction cooktop until the temperature drops below 485°F. The special material will not loose this extraordinary property, even after years of use.
The ProControl frying pans have 7-layer construction rim-to-rim with the easy-to-clean stainless steel Silvinox® finish. Two standard pan sizes are available (9.4", 11.0"). The pans complement our Demeyere Atlantis, Apollo, and Sirocco lines.
